Simple dish with a lot of taste and Omega 3!
If you think it is difficult, then it is not. It’s ready quickly, tastes delicious and you can serve it easily to guests who love a bit spicy. The fact that you don’t have to stand in the kitchen all evening long is also an advantage. You actually can spend time with your guests :-)
It’s just a little bit expensive cause of the scampi (prawn), but for the rest you don’t need much.
INGREDIENTS (serving 2)
2 tbsp of sunflower oil
400 gr of prawn (scampi)
1 Onion finely sliced
400 gr can chopped tomatoes
2 tbsp of Madras Curry paste
1 tsp of turmeric
1 glove of garlic
1/2 tsp of black cumin seeds
Large bunch of Coriander chopped
1. If you have frozen scampi, defrost them the night before or use your microwave like i do and peel them. Also remove the intestines. Cause that is really not tasty in the mouth! Set aside.
2. Heat up the oil in a wide pan, so the scampi have room to bake. If you use a too small pan, they will get soaked. You want the scampi to be crispy and soft inside.
Gently heat up the oil and add the Onion along with the spices, curry paste and garlic. Let sizzle a bit so the onion becomes more soft and gentle.
3. Add the scampi and stir a bit till they are divided nicely. Let them cook for 3 to 4 minutes on each side. They will change color. Season with pepper and salt if you want.
4. At last add the chopped coriander just before serving with some boiled rice and naan if you want.
TIP : I did not have time to make my own curry paste, but as you see you can easily use some from the store. There are different kinds, be sure to pick a good one.
