Witches Pumpkin Soup

Tasty for special occasions

I know Halloween is over...........or is it really? :-)
Every year i make this soup around november / december as i have so many pumpkins left from Halloween time. This soup can be freezed in perfectly too. I save some for around the holidays in december.

This soup is seasoned with herbs and apple cider and is brewed with sherry at the end. No, it has no eyeballs inside :p

No special instructions, just a nice fresh autumn soup with a witches twist!

Chicken Korma

Well, you have to make it to know this simply
 tastes and smells delicious!

I totally love Indian food, but it’s so hard to get it here in my region....not to mention the prices they ask. Today i saw at the indian restaurant that this dish costs 16,90 euro each person. I think i payed about 15 euro for everything. That means for 4 persons!

The moment i see that, i start to think....why don’t i make this myself?
Cause it can not be that hard, right? no it wasn’t!!

I always have a lot of spices in stock. Cause i cook very versatile. Make sure you get these spices to create the taste. This is totally made from scratch. No premade things, no sugars, no other unhealthy things. You simply know what you are going to eat and i think that is just awesome!
Even on a friday evening, it does not take that much time. No marinating. simple cooking.

Bran Yoghurt bread

Start the day with some fibers

This is the bread i make at least every week. I make it for over 2 years now and i keep liking it. Sometimes i eat granola, but mostly this bread as breakfast.
It’s a grain bread with yoghurt, has a lot of fibers, and is also ideal to roast. It also does not contain any sugars, as i use a substitute.  The melasse will give the taste and color to this bread.

I don’t like the bread you can buy here in i feel it has nothing more than air inside and i mostly feel blown up too when i eat bread from the grocery store.
In Germany, you can find more of this kind of breads....however i never found any with yoghurt :)

Belgian Meat Stew with Air fried fries

Traditional Meat Stew with original Belgian Beer
and Air Fried French Fries

If i can ask all Belgians 1 question, that would be......Do you know Meat Stew (Stoofvlees)?
I’m sure they will say “Of Course”! It’s the kind of dish that is traditionally Belgian.

You can compare it with pumpkin pie for the usa. Except we eat meat stew all over the year and typical at the chip shop (frituur ;-)
if you live abroad and ever would decide to come to Belgium, you definitely have to try Belgian meat stew. I actually make this every 2 weeks and freeze in a portion for the next week.
Now, i give you the change to make this yourself, as it always tastes better homemade. Make sure you find your ingredients and you are ready to start.

I will add the Belgian name marked in BLUE for my dutch speaking friends :)

Creamy Walnut Pumpkin Pie

The perfect Thanksgiving Pie

If i could give you all the stars from the sky, i would...

In just 1 week it’s Thanksgiving for my American friends, and i felt like making a kind of traditional pie and see for myself what American people are talking about. I have an adoration for the United States as you can see also with my Pin-ups who look like ladies coming straight from the American 50’s with the ooohs and the aaahss  >>

I have been searching through recipes and thinking on what to make with all the pumpkins i have from my garden. For this recipe i made everything myself (except i did no magic on the pumpkin :D).
Yesterday i have been working a lot in the kitchen to create this pie, as it was the first time i made this. The crust was most crispy, the pumpkin tasted perfectly and the bottom had a crunch made of walnuts. Let me show you how i made this......

Spaghetti Puttanesca

Simple and so delicious!

I can not advice you enough to make this yourself. You don’t even have to make fresh pasta. But oh this is so easy! I’m always surprised how much money they ask for this meal in restaurants and it’s really the easiest pasta dish around.

I like the anchovy very much and make sure you use fresh parsley so you get a very natural taste. Especially cause it contains more vitamins.

Homemade Granola

The most important meal of the day!

In our lives it’s important to eat descent and healthy, drink a lot of water and go outdoors or do some exercise. I learned that along the way......

So the most important meal of the day is Breakfast. It should give you power, motivation, strength and just enough calories. This Granola contains nuts, carbs, calcium and fruits.
Well, there are a lot of granola’s out there and i look around on the net a lot and also try to learn more about food on itself. Like why nuts are so good, or why should i add Chia seeds and so on.

Although i really like to eat chocolate, i’m aware that too much is no good. I did not add it to this granola. It also reflects your skin. When you eat badly, you will also have a bad skin. It’s a luxury product and is not complete meal.....Chocolate may give a “feel good” feeling............but that’s for a moment.

Healthy Tomato Risotto

Healthy, tasty and easy

If you are not familiar with Risotto, then this is the time to make it. It’s such an easy 1 pot recipe and i’m sure you will make this more than once.

It’s something different than with "mushrooms” which i made before.
The only thing you have to think about is to give it some time to cook well. You want rise that is nicely cooked and you can compare it to slow cooking.

First of all i want to mention that i regulary go shopping to the Italian store. I have one in my neighborhood. And i know there are several in brussels and Antwerp from other suppliers. Look here where i find my things >>
ITALIA  AUTENTICA. You can search on their website where the nearest one is to your home.
