Spicy Ricotta Cavatelli with shrimps

This is soooooooo delicious!!

I always wanted to make my own Cavatelli and finally i did hehe. For my birthday lately i got a nice Vintage Cavatelli machine from Vitantonio n°50 by my husband. It’s pure vintage and still in good condition! This is a unique piece in the pasta world.
It was so hard to find it and i did on Ebay, but be quickly if you want one too, as they sell fast.

Quick wok in less than 30 minutes

Now this is a very fast, healthy and delicious dish!

Many women don’t have time to cook due their jobs, but still want to eat healthy. But even men like to cook healthy i notice lately hehe.
What better way than to make a nice wok. You don’t need very much, just a wok, rice and some fresh ingredients. As i like to cook italian very much, i also like to wok for a change, cause then i have a chance to cook other vegetables from my garden. Now i had 600 gr of French beans in my fridge and i had to use it in a dish somewhere. So i thought of making a wok. I still have 300 gr of beans left to make something else today haha.
You can replace the tofu with chicken breast cut in pieces. Or other meat....what you like. Experiment and find out what you like best. I don’t eat meat much and my body does not seem to handle it well, so that’s why i like to cook veggie.

I just want to let you know that my husband said “wow, so delicious” to me when he tasted this :D

No recipe today, as i feel we need to talk about kitchen knives first :)

Everyone knows how hard it is and frustrating when you have to cut some onions or carrots with an unsharpened low quality knife (which you have to sharpen before you cook every day). Let’s even say it’s also dangerous to cut with an unsharpened knife as you have 80% more chance to slip away and cut your fingers. Which happened to me a lot. and don’t want to mention that how longer your face is staying above an onion, the more you cry LOL.

So, i was tired of cutting my fingers or “Nails” and crying with onions all the time. Always some slices off my nails....and we know it takes some time till nails grow back hehe. A lady can not show herself with short nails, oh no.
I decided to invest in some good kitchen knives, but which ones to choose????

Saffron Risotto with Sage

High quality meal in only 35 minutes

Risotto is really not hard to make and is so delicious. There are so many variations around, so i thought i make one with Saffron and sage, it gives such a nice yellow color to the rice.

I had found a recipe for making risotto with balsamic vinegar, but i had no vinegar in the i changed it to Saffron and sage fresh from the garden to give it that extra touch. Also this recipe is made normally with a good wine, but again.....i had no wine in the house LOL. So i used my Babycham sparkling perry and i must say that it tasted really good.
And i had no pecorino in the house, so i used Parmesan. so easy to change a recipe :-)

This proves that you can cook with only ingredients in the house that you have at that time :)
Sometimes i’m too lazy to go especially to the store to get the ingredients needed, so then i change my recipe to what i have. This way i came to this dish.

Coconut blossom Ice-cream

This ice cream has a tasty surprise :)

I wanted to make some ice cream again for a while, at the end it is summer and in summer we like to eat something refreshing with these temperatures. Well, in fact i wanted to make some Vanilla ice cream, but instead of using industrial granulated sugar, i wanted to use something else.

I regulary go to the nature (bio) shop and i discovered Coconut Blossom sugar. As the harmful effects of sugar and high Fructose corn syrup become increasingly more evident, people are turning to natural alternatives like me. So i came across this ‘new’ alternative sugar.
A sweetener that has become very popular in the past few years.
This sugar is derived from the coconut palm tree and is touted as being more nutritious and lower on the glycemic index than sugar. I guessed it would be the perfect alternative for my ice cream.

Juicy Summer Smoothie

Perfect for a hot summerday!

Ah, summer is there again after a rainy and cold week. I start to feel like making smoothies again.
They are perfect to drink in the morning or afternoon in a nice Mason ball jar. Silly that i don’t have a picture yet with this smoothie in a Mason Ball jar, as i use these jars a lot :-)
I love this smoothie as it has the nice taste of the juiced pineapple which makes this drink very sweet.
And you don’t have to feel quilty by drinking it, as it’s made with yoghurt. Soooo delicious......
What food can do.....yes it controls your mood :D
